Ingredients

  • 1 package (12 oz) pork potstickers
  • 6 cups chicken broth (low-sodium preferred)
  • 2 tbsp fresh ginger, grated
  • 4 garlic cloves, minced
  • 4 green onions, sliced
  • 2 medium carrots, thinly sliced
  • 3 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 2 cups baby bok choy or spinach, chopped
  • Cilantro (optional for garnish)

Instructions

  1. Prep all ingredients: chop green onions, slice carrots, mince garlic and ginger.
  2. In a large pot, heat sesame oil over medium heat. Add ginger and garlic; sauté until fragrant (about 30 seconds).
  3. Pour in chicken broth and bring to a gentle simmer. Add carrots and bok choy; let cook for about 5-7 minutes until carrots soften.
  4. Gently add potstickers to the pot; cook for 8-10 minutes until heated through.
  5. Stir in soy sauce and half of the green onions; taste and adjust seasoning if needed.
  6. Serve hot, garnished with remaining green onions and cilantro if desired.
