- 1 package (12 oz) pork potstickers
- 6 cups chicken broth (low-sodium preferred)
- 2 tbsp fresh ginger, grated
- 4 garlic cloves, minced
- 4 green onions, sliced
- 2 medium carrots, thinly sliced
- 3 tbsp low-sodium soy sauce
- 1 tsp sesame oil
- 2 cups baby bok choy or spinach, chopped
- Cilantro (optional for garnish)
Instructions
- Prep all ingredients: chop green onions, slice carrots, mince garlic and ginger.
- In a large pot, heat sesame oil over medium heat. Add ginger and garlic; sauté until fragrant (about 30 seconds).
- Pour in chicken broth and bring to a gentle simmer. Add carrots and bok choy; let cook for about 5-7 minutes until carrots soften.
- Gently add potstickers to the pot; cook for 8-10 minutes until heated through.
- Stir in soy sauce and half of the green onions; taste and adjust seasoning if needed.
- Serve hot, garnished with remaining green onions and cilantro if desired.
