- 8 oz (225g) fresh button or cremini mushrooms, sliced
- 4 cups (120g) baby spinach
- 2 cloves garlic, minced
- 2 tbsp (30ml) extra virgin olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp (15ml) fresh lemon juice
Instructions
- Clean mushrooms with a damp paper towel and slice evenly. Rinse spinach under cold water and set aside.
- In a large skillet over medium heat, add olive oil. Once shimmering, sauté minced garlic for about 30 seconds until fragrant.
- Add sliced mushrooms to the skillet and cook until golden brown and tender, around 5 minutes.
- Stir in the fresh spinach and cook for an additional 2-3 minutes until wilted.
- Season with salt, pepper, and drizzle lemon juice before serving.
