Instructions
- 1. Marinate the Chicken: In a bowl, combine soy sauce, brown sugar, garlic, and ginger. Add chicken thighs and marinate for at least 30 minutes.
- 2. Sear the Chicken: Heat oil in a large pot over medium-high heat. Add marinated chicken and sear until golden brown on both sides (about 5-6 minutes).
- 3. Add Aromatics: Stir in remaining ginger and garlic; sauté until fragrant (1-2 minutes).
- 4. Pour in the Broth: Add water or chicken broth to the pot and bring to a gentle simmer. Cook for about 20 minutes.
- 5. Cook Rice: While the broth simmers, prepare jasmine rice according to package instructions.
- 6. Finish with Sesame Oil: Stir in sesame oil before serving hot over rice topped with scallions.
