Ingredients

Instructions

  1. Chop the onion, garlic, and carrots.
  2. Heat olive oil in a large pot over medium heat. Sauté onions until translucent, then add garlic until fragrant.
  3. Stir in carrots and ground cumin; cook for another 3-4 minutes.
  4. Add rinsed lentils and vegetable broth. Bring to a boil, then reduce heat and simmer uncovered for 25-30 minutes until lentils are tender.
  5. Finish with fresh lemon juice and season with salt and pepper to taste.
