- 1 cup green or brown lentils
- 1 medium yellow onion
- 3 cloves garlic
- 2 medium carrots
- 2 teaspoons ground cumin
- Juice of 1 lemon
- 4 cups vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Chop the onion, garlic, and carrots.
- Heat olive oil in a large pot over medium heat. Sauté onions until translucent, then add garlic until fragrant.
- Stir in carrots and ground cumin; cook for another 3-4 minutes.
- Add rinsed lentils and vegetable broth. Bring to a boil, then reduce heat and simmer uncovered for 25-30 minutes until lentils are tender.
- Finish with fresh lemon juice and season with salt and pepper to taste.
- Serve hot, garnished with fresh herbs if desired.
