  • Total Time: 35 minutes
  • Yield: Serves 6

Ingredients

Scale
  • 2 cups fresh spinach (chopped)
  • 4 large eggs
  • 1 cup crumbled feta cheese
  • 1 medium onion (diced)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Fresh or dried herbs (optional)

Instructions

  1. Prepare by washing and roughly chopping the spinach. Dice the onion finely.
  2. In a non-stick skillet, heat olive oil over medium heat. Sauté onions until golden brown (about 3-4 minutes), then add spinach and cook until wilted.
  3. In a bowl, whisk eggs with salt and pepper until combined. Pour over sautéed veggies in the skillet.
  4. Cook on medium-low heat for about 5 minutes until edges set but center remains soft.
  5. Preheat oven to 375°F (190°C). Transfer skillet to the oven or pour mixture into a greased baking dish. Bake for 15-20 minutes until puffed and lightly golden.
  6. Let cool for 5 minutes before slicing into wedges. Serve warm or at room temperature.
