- 2 cups fresh spinach (chopped)
- 4 large eggs
- 1 cup crumbled feta cheese
- 1 medium onion (diced)
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- Fresh or dried herbs (optional)
Instructions
- Prepare by washing and roughly chopping the spinach. Dice the onion finely.
- In a non-stick skillet, heat olive oil over medium heat. Sauté onions until golden brown (about 3-4 minutes), then add spinach and cook until wilted.
- In a bowl, whisk eggs with salt and pepper until combined. Pour over sautéed veggies in the skillet.
- Cook on medium-low heat for about 5 minutes until edges set but center remains soft.
- Preheat oven to 375°F (190°C). Transfer skillet to the oven or pour mixture into a greased baking dish. Bake for 15-20 minutes until puffed and lightly golden.
- Let cool for 5 minutes before slicing into wedges. Serve warm or at room temperature.
