  • 2 medium sweet potatoes
  • 1 ½ cups all-purpose flour (or whole grain)
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¾ cup brown sugar
  • 2 large eggs
  • ½ cup milk (or non-dairy alternative)
  • ½ cup butter (softened)
  • Pinch of salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel, cube, and boil the sweet potatoes until tender, about 15 minutes. Mash until smooth.
  3. In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  4. In another bowl, beat softened butter and brown sugar until fluffy. Mix in eggs one at a time and then add vanilla.
  5. Gently fold in mashed sweet potatoes and dry ingredients until just combined.
  6. Fill muffin cups three-quarters full with batter and bake for 18–20 minutes or until golden brown.
