- 2 medium sweet potatoes
- 1 ½ cups all-purpose flour (or whole grain)
- 1 tsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg
- ¾ cup brown sugar
- 2 large eggs
- ½ cup milk (or non-dairy alternative)
- ½ cup butter (softened)
- Pinch of salt
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 375°F (190°C).
- Peel, cube, and boil the sweet potatoes until tender, about 15 minutes. Mash until smooth.
- In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, beat softened butter and brown sugar until fluffy. Mix in eggs one at a time and then add vanilla.
- Gently fold in mashed sweet potatoes and dry ingredients until just combined.
- Fill muffin cups three-quarters full with batter and bake for 18–20 minutes or until golden brown.
