- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- ½ cup brown sugar
- ½ cup unsalted butter, softened
- ¾ cup creamy peanut butter
- 1 large egg
- 1 tsp baking soda
- 1 cup mini marshmallows
- 1 cup crushed graham crackers
- ½ cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy (about 2-3 minutes).
- Mix in the peanut butter and egg until well combined.
- Gradually add the flour and baking soda, stirring gently until no flour streaks remain.
- Stir in chocolate chips and crushed graham crackers until evenly distributed.
- Using a tablespoon or cookie scoop, drop rounded balls of dough onto prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes until edges are golden but centers remain soft.
- Press mini marshmallows onto half of the warm cookies and top with another cookie to create sandwiches. Let cool completely before serving.
