Instructions

  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy (about 2-3 minutes).
  3. Mix in the peanut butter and egg until well combined.
  4. Gradually add the flour and baking soda, stirring gently until no flour streaks remain.
  5. Stir in chocolate chips and crushed graham crackers until evenly distributed.
  6. Using a tablespoon or cookie scoop, drop rounded balls of dough onto prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes until edges are golden but centers remain soft.
  8. Press mini marshmallows onto half of the warm cookies and top with another cookie to create sandwiches. Let cool completely before serving.
