- 4 boneless, skinless chicken breasts (about 1 lb)
- 2 cloves fresh garlic, minced
- 1 cup bell peppers (mixed red and green), diced
- 1 cup pineapple chunks (fresh or canned)
- ¼ cup low-sodium soy sauce
- 2 tbsp brown sugar
- 2 tbsp rice vinegar
- 1 tbsp cornstarch
- 1 tbsp vegetable oil
Instructions
- Chop chicken into bite-sized pieces and dice bell peppers.
- In a bowl, mix soy sauce, minced garlic, and cornstarch. Marinade the chicken for 20 minutes.
- Heat oil in a large pan over medium-high heat. Sauté marinated chicken until golden brown (5-7 minutes).
- Add diced bell peppers and pineapple; cook for another 5 minutes.
- In a small bowl, whisk together brown sugar, rice vinegar, soy sauce, and cornstarch until smooth. Pour this into the pan and stir until thickened (3-4 minutes).
- Serve hot over rice or noodles and garnish with chopped green onions.
