- 1 medium green cabbage, chopped
- 14 oz smoked sausage, sliced
- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- 4 cups low-sodium chicken broth
- 2 medium carrots, thinly sliced
- 1 tbsp paprika (sweet or smoked)
- Salt and pepper to taste
- 2 tsp olive oil
Instructions
- Prepare your vegetables by chopping the cabbage into bite-sized pieces, dicing the onion, and mincing the garlic.
- In a large pot over medium heat, add olive oil. Once heated, sauté the onion and carrots until the onion turns translucent (about 5 minutes).
- Add minced garlic and sliced sausage; cook for another 3-4 minutes until fragrant.
- Stir in the chopped cabbage and cook until slightly wilted (about 5 minutes).
- Pour in chicken broth and add paprika; bring to a gentle simmer for about 20 minutes.
- Adjust salt and pepper to taste before serving hot.
