Tender, caramelized sirloin steak cubes and crispy pan-fried baby potatoes tossed in rich garlic herb butter in one 25-minute skillet.

  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

Crispy Golden Potatoes

  • 1 lb (450g) baby gold potatoes, halved or quartered
  • 1 Tablespoon extra-virgin olive oil
  • 1 Tablespoon unsalted butter
  • 1/2 teaspoon kosher salt and 1/4 teaspoon freshly cracked black pepper

Garlic Butter Steak Bites

  • 1.5 lbs (680g) top sirloin or ribeye steak, cut into 1-inch cubes
  • 1 Tablespoon extra-virgin olive oil
  • 3 Tablespoons (43g) unsalted butter
  • 5 cloves garlic, finely minced
  • 1 Tablespoon fresh rosemary, finely chopped
  • 1 Tablespoon fresh thyme leaves
  • 1 teaspoon kosher salt and 1/2 teaspoon freshly cracked black pepper
  • 2 Tablespoons fresh Italian parsley, chopped, for garnish

Instructions

  1. Parboil Potatoes: Place potato halves in a medium pot, cover with cold salted water, and bring to a boil. Simmer for 5 minutes until barely fork-tender. Drain well and pat dry with paper towels.
  2. Crisp Potatoes: Heat 1 Tablespoon olive oil and 1 Tablespoon butter in a large heavy skillet (cast-iron or stainless steel) over medium-high heat. Add potatoes cut-side down. Cook for 4 to 5 minutes without moving until deep golden and crisp. Turn and cook 2 minutes more. Transfer to a plate.
  3. Season & Sear Steak: Pat steak cubes dry with paper towels; season generously with 1 teaspoon salt and 1/2 teaspoon black pepper. Add 1 Tablespoon olive oil to the hot skillet. Working in two batches to avoid crowding, sear steak cubes for 3 to 4 minutes, turning once, until deeply caramelized and medium-rare.
  4. Combine with Garlic Herb Butter: Return all steak and potatoes to the skillet over low heat. Add 3 Tablespoons butter, minced garlic, rosemary, and thyme. Baste the bubbling garlic butter over the steak and potatoes for 1 minute until fragrant.
  5. Garnish & Serve: Remove from heat, sprinkle with chopped fresh parsley, and serve immediately with extra pan drippings.

Notes

  • Meat Cuts: Top sirloin, ribeye, or New York strip work best. Avoid stew meat as it requires long braising to become tender.
  • Leftover Storage: Store in an airtight container in the fridge for up to 3 days. Reheat in a hot skillet for 2 minutes to keep potatoes crisp.
