- 1 lb lean ground beef
- 4 cups chopped green cabbage
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes
- 4 cups low-sodium beef broth
- 2 medium carrots, sliced
- 1 tsp Italian seasoning
- 2 bay leaves
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, add a splash of oil. Sauté chopped onions and minced garlic until softened.
- Increase heat slightly and add ground beef; cook until browned. Drain excess fat if needed.
- Stir in cabbage, carrots, and diced tomatoes with their juices; mix well.
- Pour in beef broth along with Italian seasoning and bay leaves. Bring to a simmer.
- Lower heat and let simmer for about 30 minutes until veggies are tender. Adjust seasonings as needed.
- Remove bay leaves before serving hot with crusty bread.
