- 2 medium sweet potatoes (about 1 cup mashed)
- 1 cup dark chocolate (high-quality, melted)
- 1/4 cup coconut oil (melted)
- 1/2 cup maple syrup
- 1/2 cup unsweetened cocoa powder
- 2 large eggs (room temperature)
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- Bake or steam sweet potatoes until tender (about 30-40 minutes), then cool and peel.
- In a microwave-safe bowl, melt dark chocolate and coconut oil together in 30-second intervals until smooth.
- In a large mixing bowl, mash sweet potatoes until smooth. Add melted chocolate mixture, eggs, maple syrup, vanilla extract, cocoa powder, baking powder, and salt; mix until well combined.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean. Allow to cool before slicing.
