- 2 lbs boneless chicken thighs
- 1 cup chopped bell peppers (red and green)
- 1 cup chopped yellow onions
- 4 cloves garlic, minced
- 2 cups diced tomatoes (fresh or canned)
- 2 tbsp olive oil
- 1 cup low-sodium chicken broth
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add onions and bell peppers; sauté for about 5 minutes until softened.
- Season chicken thighs with salt and pepper. Add them to the pot and sear on both sides until golden brown, about 5 minutes.
- Stir in garlic and tomatoes; cook for another 2 minutes until fragrant.
- Pour in chicken broth; bring to a gentle simmer. Cover and cook for 30-40 minutes until chicken is tender.
- Adjust seasoning as needed, then stir in cilantro before serving.
