Thick-cut bone-in pork chops seared to a golden crust and basted in a rich honey garlic butter pan sauce in just 20 minutes.

  • Total Time: 20 minutes
  • Yield: 4 large pork chops 1x

Ingredients

Scale

Seared Pork Chops

  • 4 thick bone-in pork chops (approx. 10 oz / 280g each, 1-inch thick)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon kosher salt and 1/2 teaspoon black pepper
  • 1 Tablespoon extra-virgin olive oil

Honey Garlic Butter Glaze

  • 3 Tablespoons (43g) unsalted butter
  • 6 cloves garlic, finely minced
  • 1/3 cup (110g) pure clover honey
  • 2 Tablespoons apple cider vinegar
  • 2 Tablespoons low-sodium soy sauce or tamari
  • 2 Tablespoons fresh parsley, chopped, for garnish

Instructions

  1. Season Chops: Pat pork chops completely dry with paper towels. In a small bowl, mix paprika, garlic powder, salt, and pepper; rub generously all over both sides of the chops.
  2. Sear in Skillet: Heat 1 Tablespoon olive oil in a large heavy skillet over medium-high heat until shimmering. Add pork chops and sear undisturbed for 4 to 5 minutes until a deep golden-brown crust develops. Flip and sear for 3 minutes on the other side.
  3. Build Glaze: Turn heat down to medium-low. Add butter to the pan; once melted, add minced garlic and cook for 30 seconds until fragrant. Pour in honey, apple cider vinegar, and soy sauce.
  4. Baste & Glaze: Stir the glaze around the chops. Use a large spoon to baste the bubbling glaze repeatedly over the pork chops for 2 to 3 minutes until an internal meat thermometer reads 140°F (60°C) and the glaze is thick and syrupy.
  5. Rest & Garnish: Remove skillet from heat and let pork chops rest in the pan for 5 minutes (internal temperature will rise to a perfect 145°F / 63°C). Spoon remaining pan glaze on top, garnish with fresh parsley, and serve.

Notes

  • Glaze Consistency: If your glaze thickens too quickly, add a splash of water or apple cider vinegar to keep it silky.
  • Meat Thermometer: Avoid letting the thermometer probe touch the bone for an accurate reading.
